Komaneka Kitchen highlights the Balinese culinary heritage in our daily service, yet we also like to explore Western cuisine. Now we’d like to share one of our favorites from Timur Kitchen – the Pesto Chicken Florentine.

Here’s our recipe.

Ingredients

Garlic 10gr
Onion 8 gr
White wine 80 ml
Chicken stock 100 ml
Smoked chicken 50 gr
Basil pesto 1 Tbsp
Penne pasta 120 gr
English spinach 30 gr
Romaine lettuce 30 gr
Parmesan cheese 20 gr
Salt
Pepper
Parmesan oil
Bread

Preparation

First, boil the pasta according to the instructions on the package, about 12 minutes. While the pasta boils, sauté the chopped onion and garlic in the parmesan oil. When you can smell the aroma, pour in the white wine. Then let it reduce.

Second, add the chicken stock, basil pesto, and smoked chicken. After 1 minute, add the romaine lettuce, English spinach, and the cooked penne pasta.

Then correct the seasoning, adding enough salt, pepper, chopped parsley, basil, and parmesan cheese, and plate it up. Serve with crusty bread croutons as a garnish.
